apple sour cream muffins

I love muffins. I might even love muffins more than I love cupcakes and cookies. Yes, a lot. I love them a lot. Eating a muffin for breakfast? Acceptable. A muffin for snack with honey? Acceptable. Chompin’ on one while making a snack? A heathy choice, duh. I rest my case.

Lara had to go and make apple muffins and remind me how much I wanted to eat the shit out of some. So I made some. And by “some” I mean like 18. That’s a lot of snacks, guys.

I’m a freak and I love sour cream in baked goods. Not like on my tacos, but in my cake. I know, it’s real odd. However, it is damn tasty in a muffin. Trust.

And like, you can’t deny that they aren’t good lookin’. Okay, so I’ll cut to the chase. How to make these beautiful muffins of your very own is below.

Apple Sour Cream Muffins

1 1/2 cups whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1/2 tablespoon nutmeg
1/4 cup vegetable oil
1 ¼ cup sour cream
¼ honey
1/4 cup brown sugar
2 eggs
4 apples (I chopped one and grated three because I got sick of chopping…)

Step 1, get excited. Step 2, mix all dry ingredients into an awesome bowl. Step 3, in another awesome bowl, combine all wet ingredients including sugar and honey. Step 4, combine both awesome bowls and be sure not to overmix. Step 5, put them in pretty muffin cups and into the oven at 350º for about 18 minutes but you should check them at 15. They’re done with a toothpick inserted into the center comes out clean.
